High-Protein Brie-Stuffed Chicken Breasts
I promise you this is true: You can eat brie and be healthy.
Seriously if there’s one takeaway you get here, let it be that! (My life’s work would be complete as an online nutritionist!!!)
Brie gets a bad rap because well it’s delicious and somewhere along the way, the health police made it seem like we shouldn’t enjoy healthy food… FALSE
Brie is high in healthy fats and a serving contains 20% of your daily B12.. who’s needs a multivitamin when you have cheese? 🧀 (Just kidding…kinda)
This meal is PACKED with protein and healthy fats.
Healthy in my book means this:
A food that helps YOU work towards:
- feeling good in your skin
- meeting your body’s macronutrient needs (= energy)
- leaving your meal emotionally and physically satisfied
A client sent me this @kalefornia_kravings recipe originally and asked if she could eat this because she assumed it may be unhealthy… and I wanted to show her that that simply wasn’t the case 🙂

Ingredients:
4 5 oz chicken breasts, raw
4 oz of brie
200 grams of a sliced apple
For marinade:
1 tablespoon of olive oil
1 tablespoon honey
1 tablespoon maple syrup
Salt, pepper, and red pepper to taste
(you can add garlic and mustard if you’d like too)
For salad:
½ cup of italian cheese
6 cups of arugula
1 tablespoon of olive oil
Instructions:
Preheat the oven to 400 degrees
Slice the chicken breasts in half
Lay ¼ of apple slices and 1 oz of brie inside each one
Mix the marinade and brush it on top
Cook for 22-26 minutes to ensure the chicken gets fully cooked
Toss the salad and serve the chicken on top
MACROS for ¼ of the above recipe:
Calories: 487 calories
Protein: 45 grams
Fat: 27 grams
Carbs: 18 grams
Fiber: 2 grams
(Plus, we had some roasted brussels on top, I recommend this if you’re looking for some additional fiber!)
