High-Protein & High-Fiber Loaded Cauliflower Nachos (so freaking satisfying!!)

40 grams of protein per serving!! 🙇🏼‍♀️

While this isn’t actually nachos (although this meal would go great with a side of chips!!), it’s a delicious alternative that my family actually loved - with more fiber than regular nachos, thanks to our friend CAULIFLOWER 🥦

And honestly, it was so easy to make! Wayyyy easier than I expected.

Use it as a meal or make it as a app and serve with something to scoop with!

Ingredients:
1-2 heads of cauliflower diced (or a bag pre-cut)
1/2 tbsp olive oil
1 lb 93/7 lean ground beef
1 packet taco seasoning
2 cups of reduced fat Mexican cheese (or any cheese!!)
1 jalapeno
1 can of black beans
Optional: Salsa & guacamole

Instructions:
Toss the cauliflower in a touch of olive oil, salt, and pepper and bake for 30 minutes on 400 degrees

While that cooks, cook the ground beef on the stove and follow the instructions on the taco seasoning packet (I am obsessed with the Spicy Siete seasoning)

After the 30 minutes is up, take the cauliflower out, push it towards the middle of the pan, scoop the meat on top and cover with the beans, meat, jalapeños, and cheese

Bake for another 5-8 minutes

Serve!!!!!!
