Recipe: Basic AF Baked Chicken

So I really prefer grilled chicken. It is absolutely tastier. BUT… we ran out of propane this week and Matt was out of town… baked chicken was my plan B.

You could also use a crock pot or Instant Pot for this but we’re packing up to move back to Atlanta so we’ve already boxed them up.

But honestly, this was just so easy.

This will take you like less than 5 minutes of work.

What you need:

  • 2-4 boneless skinless chicken breasts

  • 1 tablespoon olive oil

  • Salt and pepper to taste

Seasoning Options (using about 1 TBSP of seasoning per breast but honestly, I just make it up every time lol)

  • Basic / plain: salt, lots of pepper, & roasted red pepper flakes (always could add paprika too!)

  • Mexican: cumin, chili powder, & lots of pepper OR just use half a packet of taco seasoning

  • Italian: Italian seasoning & dried basil

Directions:

  • Pre-heat oven to 350 degrees

  • Drizzle half the oil in the bottom of the pan (I use a ceramic dish)

  • Rub the rest of the oil on the breasts

  • Lie the breast flat in the dish

  • Coat the top with seasoning, don’t be afraid to over do it!!

  • Bake for 40-50 minutes (done once the internal temperature reaches 160 degrees, basic meat thermometer has changed my life, I swear, here’s a basic one from Amazon)

  • Once it done, let it sit for 3-5 minutes, then take 2 forks and shred it. This is great for wraps, sandwiches, soups, salads, and more!!

PS. I didn’t add this one in Lose It because it varies a bit depending on how much chicken & oil you use!!

Serving size: 3 oz cooked chicken

Calories: 170

Protein: 26.4 grams

Carbs: 0 grams

Fiber: 0 grams

Fat: 6.4 grams

Note: These macros were for 16 oz raw chicken + 1 tablespoon of olive oil. Made 12 oz cooked chicken! Meat shrinks when cooked :)
